The Pastiera (Traditional Neapolitan cake)

Ingredients for 8 servings

For the dough:
500 g whole wheat flour
200 g sugar
200 g butter
3 eggs
1 sachet of vanilla extract
Lemon or Orange zest
Flower water
Pinch of salt

For the filling:
500 g baked wheat
500 g ricotta cheese
250 ml milk
300 g sugar
5 eggs
100 g candied mixed fruit
30 g butter
2 sachets of vanilla extract
Pinch of cinnamon

Put the flour, the sugar and the butter into a bowl and mix all the ingredients together; add the eggs and whisk again (being careful not to over-mix). When the dough is smooth and firm, wrap it and store it in the fridge. After 2 hours, start kneading the dough until reaching the 5 mm tick and use it to fold a baking tray, pricking it all over with a fork. For the filling put the ricotta cheese and the sugar into a bowl, then whisk. At the end, add the rest of the ingredients, and gently mix all the ingredients. When the filling is ready pour it into the pie shell. Cut other pie crust into 1” strips and place them on top in criss-cross pattern. Bake for 75 minutes… and voilĂ , the perfect Pastiera!
