Oriental ingredients and Mediterranean flavors: these are the two main ingredients of Il Comandante restaurant menu which offers a tantalizing, refined cuisine every evening. For the winter season, our Executive Chef Salvatore Bianco, 1 Michelin Star, has been inspired by his Neapolitan origin and by his addiction to techniques and tastes of Oriental tradition. The new menu offer fish and meat dishes served in a refined way which reflect the Chef personality in each ingredient.
Salvatore Bianco, born in 1978, is the executive chef of Il Comandante, the flagship gourmet restaurant of the Romeo hotel. Originally from Torre del Greco, Chef Bianco dishes are infused with the flavours and aromas of the Gulf of Naples and also reflect his love of marrying ingredients and influences from other cultures and territories.
Chef Bianco's cuisine is expressed through plates of rare elegance, created with the highest quality ingredients, carefully prepared so as not to alter the original flavours and essences of the raw materials and nutritional value. Research, passion, culture and respect for the land, plus a strong aesthetic, give life to gourmet creations that seduce the eyes and palate, tickle the nose and even the ear.
Chef Salvatore Bianco has prepared a brand new a la carte menu, along with two tasting menus - one based on fish and one territorially based, for guests of Il Comandante. In addition, every evening a chef's "Freehand" selection of seven courses created in the moment and based on the seasonality and daily availability of fresh ingredients is offered.
